Taco Nut "Meat"

Delicious and healthy taco meat substitute that can be used with any meal base from tacos, to burritos, to nachos, to salads ...


raw gluten free – plant-based – vegan – organic


mise en place: 30 minutes (with pre-soaked nuts)

prep time: 5 minutes

creates: about 2 1/2 cups


tools we use


  • measuring cups and spoons

  • food processor

  • spatula

  • 2 glass bowls (for nut soaking)


things you need


  • 1 1/2 c raw walnuts* soaked and rinsed (see helpful hints for soaking instructions)

  • 1/2 c raw cashews* soaked and rinsed

  • 1/4 c finely diced onion*

  • 2 cloves finely diced garlic*

  • 2 tbsp nutritional yeast

  • 2 tbsp hemp hearts*

  • 2 tbsp sprouted seed mix* (our mix has pumpkin and sunflower seeds)

  • 1 tbsp olive oil*

  • 1/2 tbsp cumin*

  • 1/2 tbsp chili powder*

  • 1/2 tbsp oregano*

  • 1/4 tsp smoked paprika*

  • 1 pinch cayenne*

  • 1 pinch cinnamon*

  • salt and pepper to taste

here’s how


  • add the walnuts and cashews to your food processor

  • pulse a few times to break up the nuts

  • scrape down the sides with your spatula

  • add onion and garlic

  • pulse again to incorporate

  • scrape down the sides

  • add the nutritional yeast, hemp, seeds, oil, and all of the spices

  • process on low speed until ingredients are combined and looks like ground meat, scraping down the sides to make sure all ingredients are well blended

  • more olive oil can be added if it looks too dry

  • add salt and pepper at the end to taste





helpful notes


  • for an overnight soak: cover the nuts with water and leave covered overnight at room temp, drain and rinse with fresh water before using

  • for a quick soak: in a heat proof bowl, dissolve a dash of himalayan pink salt with warm water, add nuts and cover with warm water, let sit covered for at least 2 hours, drain and rinse before using

  • you can play with different types of chili powders to find one that suits your taste

  • omit the cayenne if you're sensitive to spicy foods
