things you need
1 medium yellow onion* ~2 c diced
1/2 head cauliflower* ~2 c riced
1 1/2 c finely diced kale*
4 cloves minced garlic*
2 tbsp olive oil*
2 lbs ground lean white meat* (chicken or turkey)
1 tsp ground rosemary*
1 tsp ground thyme*
1/4 tsp ground sage*
S & P to taste

here’s how
in a large pan add olive oil and heat to medium
add onions and cauliflower with a pinch of salt, stirring for 5 minutes
turn down heat to medium low
add in the kale, garlic, more salt and pepper, stirring for another 5 minutes until brown bits start to appear
add ground meat, rosemary, thyme, and sage
cook for another 20 minutes, stirring often, breaking up the meat into crumbles until the meat is thoroughly cooked
helpful notes
this is a large batch (i like to make a lot to freeze ahead for use later in the week), feel free to half the recipe
if the meat looks to be drying out while cooking, add a little broth or water to moisten
